Ingredients
12 oz linguine
1 lb beef sirloin or flank steak, thinly sliced
2 tbsp salted butter
4 cloves fresh garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 tbsp olive oil
1/2 tsp freshly ground black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add the sliced beef in batches and sear for 2–3 minutes per side until browned. Remove and set aside.
2. Bring a pot of salted water to boil and cook linguine until al dente. Reserve 1/2 cup pasta water, then drain.
3. In the same skillet, melt butter over medium heat. Add garlic and sauté for about 1 minute until fragrant.
4. Reduce heat to medium-low. Add heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and smooth.
5. If needed, thin the sauce with reserved pasta water.
6. Return beef to the skillet, add the cooked linguine, and toss until well coated and heated through.
7. Season with black pepper and top with chopped parsley. Serve hot with extra parmesan.
Notes
This pasta is best served fresh and hot.
For easier slicing, freeze the beef for 15 minutes beforehand.
Don’t skip the reserved pasta water—it helps bind the sauce beautifully.
