Ingredients
1 lb boneless skinless chicken breasts
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
3 cloves garlic, minced
2 cups chicken broth
1 cup orzo pasta
3/4 cup grated parmesan cheese
1/2 cup milk or half-and-half
2 tbsp butter
2 tbsp chopped fresh parsley (optional)
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Sear the chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
4. In the same skillet, sauté garlic until fragrant, about 1 minute.
5. Add orzo and stir to coat in the garlic oil. Toast for 1–2 minutes.
6. Pour in chicken broth and bring to a simmer. Cook, stirring occasionally, until orzo is tender.
7. Reduce heat and stir in milk or half-and-half, butter, and parmesan until creamy.
8. Return chicken to the skillet and warm through.
9. Garnish with parsley and serve hot.
Notes
Let orzo toast slightly before adding broth for extra flavor.
Use pre-cooked chicken to speed up the recipe.
Add spinach, sun-dried tomatoes, or mushrooms to customize.
