Description

Creamy Parmesan Rotini with Cajun Garlic Butter Chicken is a flavorful and comforting pasta dish combining tender Cajun-spiced chicken, creamy Parmesan sauce, and spiral rotini noodles. This easy weeknight dinner is rich, savory, and perfect for the whole family.


Ingredients

2 chicken breasts

2 teaspoons Cajun seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons unsalted butter

3 garlic cloves, minced

2 cups heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon Italian seasoning

12 ounces rotini pasta

1/4 cup fresh parsley, chopped

1/2 cup reserved pasta water


Instructions

1. Bring a large pot of salted water to a boil and cook rotini until al dente. Drain and reserve 1/2 cup of pasta water.

2. Season chicken breasts with Cajun seasoning, salt, and black pepper.

3. Heat olive oil in a skillet over medium heat and sear chicken for 5-6 minutes per side until golden and fully cooked. Set aside to rest.

4. In the same skillet, reduce heat and melt butter. Add minced garlic and sauté for 1 minute until fragrant.

5. Stir in heavy cream and let simmer for 2 minutes, then add Parmesan cheese. Stir until melted and smooth.

6. Add Italian seasoning and reserved pasta water if the sauce needs thinning.

7. Toss in the cooked rotini and stir to coat in the creamy sauce.

8. Slice the chicken and either mix it into the pasta or serve it on top.

9. Garnish with chopped parsley and extra Parmesan before serving.

10. Serve hot and enjoy!

Notes

This dish is best served immediately while hot and creamy.

To reheat leftovers, add a splash of milk or cream to bring back the sauce’s texture.

You can substitute chicken with shrimp for a tasty variation.
