Ingredients
1 lb chicken breast
3 garlic cloves, minced
1 tsp red pepper flakes
2 tbsp butter
2 tbsp olive oil
3 cups fresh spinach
1 cup grated Parmesan cheese
1 cup white rice
2 cups chicken broth
1/2 cup heavy cream
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Season chicken with salt, pepper, and red pepper flakes.
2. In a skillet, heat olive oil over medium-high heat. Sear chicken until golden brown and cooked through, adding garlic toward the end. Remove and set aside.
3. In the same skillet, melt butter. Add rice and toast for 1–2 minutes.
4. Pour in chicken broth, bring to a simmer, cover, and cook until rice is fluffy and liquid is absorbed.
5. Stir in heavy cream, Parmesan cheese, and spinach. Mix until creamy and spinach is wilted.
6. Slice the cooked chicken and place on top of the rice mixture.
7. Spoon any pan sauce over the top and serve warm.
Notes
Use chicken thighs if you prefer juicier meat.
Add mushrooms or kale for variation.
To reheat leftovers, use a splash of broth or cream.
