Ingredients
900g potatoes
2 cups heavy cream
3 cloves garlic, minced
1 medium onion, finely chopped
2 tablespoons butter
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon fresh thyme leaves
1 ½ cups shredded cheese (cheddar or mozzarella)
½ cup grated parmesan cheese
Instructions
1. Preheat your oven to 375°F (190°C) and butter a medium-sized baking dish.
2. Peel and thinly slice the potatoes to about 1/8 inch thickness.
3. In a saucepan over medium heat, melt the butter and cook the onion until softened. Add garlic and stir for 1 minute.
4. Pour in the heavy cream, add salt, pepper, and thyme. Simmer gently for 5 minutes, then remove from heat.
5. Begin layering: place a layer of potatoes at the bottom of the dish, spoon over some cream mixture, and sprinkle with shredded cheese. Repeat until all ingredients are used.
6. Top the final layer with remaining shredded cheese and parmesan.
7. Cover the dish with foil and bake for 45 minutes.
8. Remove foil and bake uncovered for 20–25 more minutes until the top is golden and bubbling.
9. Let rest for 10 minutes before serving to allow it to set.
Notes
This dish can be made ahead and refrigerated overnight before baking.
Use a mandoline slicer for evenly thin potato slices.
If reheating leftovers, add a splash of cream to restore moisture.
