Description

Ingredients

12 oz pasta

1 cup pumpkin puree

1 cup heavy cream

2 garlic cloves, minced

1/2 cup grated Parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh sage or thyme (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.

2. In a large skillet over medium heat, melt butter with olive oil. Add garlic and sauté for 30 seconds until fragrant.

3. Stir in pumpkin puree, heavy cream, salt, pepper, and nutmeg. Cook until smooth and heated through, about 5 minutes.

4. Reduce heat to low, add Parmesan, and stir until melted into the sauce.

5. Add cooked pasta to the sauce and mix well. Use reserved pasta water to loosen the sauce if needed.

6. Garnish with extra Parmesan and herbs if using. Serve hot.

Notes

Use freshly grated Parmesan for best melting and flavor.

Reserve pasta water—it’s key for thinning and binding the sauce.
