Ingredients
4 salmon fillets
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
3 cups fresh spinach
1 tablespoon lemon juice
½ teaspoon salt
½ teaspoon black pepper
Instructions
1. Season the salmon fillets with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear the salmon for 4 minutes per side until golden. Remove and set aside.
3. Lower heat to medium, add butter and minced garlic to the same skillet. Sauté for 30 seconds.
4. Pour in the heavy cream and stir well.
5. Add fresh spinach and stir until wilted.
6. Mix in grated Parmesan until the sauce is smooth and creamy.
7. Add lemon juice and adjust seasoning.
8. Return salmon to the skillet and spoon sauce over each fillet. Simmer 2 more minutes and serve hot.
