Description
This Creamy Sun-Dried Tomato Chicken Orzo recipe combines juicy chicken, orzo pasta, and a rich sun-dried tomato cream sauce in one skillet. It’s the perfect one-pan chicken dinner for busy weeknights, creamy orzo pasta lovers, or cozy family meals.
Ingredients
2 chicken breasts
1 cup orzo pasta
3 garlic cloves, minced
1/2 cup sun-dried tomatoes in oil, chopped
1 cup heavy cream
2 cups chicken broth
1/2 cup grated parmesan cheese
2 cups fresh spinach
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
1. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet and sear the chicken until golden and cooked through. Remove and set aside.
2. In the same pan, reduce heat to medium and sauté the minced garlic and chopped sun-dried tomatoes for 2–3 minutes.
3. Stir in the orzo and let it toast slightly in the pan. Pour in the chicken broth and bring to a simmer. Cover and cook for 8–10 minutes, stirring occasionally.
4. Once the orzo is tender, reduce heat and stir in the heavy cream and parmesan cheese. Let it simmer until the sauce thickens.
5. Add fresh spinach and stir until wilted. Slice the cooked chicken and return it to the skillet. Warm everything together for 2–3 minutes.
6. Taste and adjust seasoning if needed before serving.
Notes
Use freshly grated parmesan for the best melt and flavor.
You can substitute chicken thighs for a juicier cut of meat.
Add crushed red pepper flakes for a touch of heat.
