Ingredients
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 pound chicken breast, diced
1 teaspoon salt
½ teaspoon black pepper
4 cups chicken broth
½ cup sun-dried tomatoes, chopped
9 ounces cheese tortellini
1 cup heavy cream
½ cup grated Parmesan cheese
2 cups fresh spinach
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant.
2. Add diced chicken, season with salt and pepper, and cook for 6–8 minutes until golden and cooked through.
3. Pour in chicken broth and bring to a simmer. Add sun-dried tomatoes and simmer for 5 minutes.
4. Add cheese tortellini and cook according to package instructions, about 4–6 minutes.
5. Reduce heat to low. Stir in heavy cream and Parmesan cheese. Let it melt and combine into a creamy broth.
6. Stir in fresh spinach and cook until wilted. Taste and adjust seasoning if needed. Serve hot.
Notes
This soup thickens as it sits; add broth to thin when reheating.
Use frozen tortellini if needed, adjusting cook time slightly.
