Description

This creamy Velveeta beef stroganoff and penne pasta recipe is the ultimate comfort food for weeknights. Made with ground beef, Velveeta cheese, and tender pasta, it’s quick, satisfying, and kid-friendly. Perfect for family dinners, cozy meals, or easy leftovers.


Ingredients

1 pound ground beef

12 ounces penne pasta

8 ounces Velveeta cheese, cubed

1 1/2 cups beef broth

1 small onion, chopped

2 cloves garlic, minced

2 tablespoons butter

1/2 cup sour cream

2 teaspoons Worcestershire sauce

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat a large skillet over medium heat and cook the ground beef until browned and fully cooked. Remove and set aside.

2. In the same skillet, melt butter and sauté the chopped onion and minced garlic until softened.

3. Pour in beef broth to deglaze the pan, scraping up any browned bits. Let it simmer briefly.

4. Lower the heat and add cubed Velveeta cheese. Stir until melted into a smooth sauce.

5. Meanwhile, cook the penne pasta according to package directions. Drain and add it to the skillet.

6. Return the browned beef to the skillet. Add sour cream and Worcestershire sauce. Stir everything together until well combined and heated through.

7. Season with salt and black pepper to taste. Serve immediately, garnished with parsley if desired.

Notes

This dish tastes best fresh but reheats well with a splash of milk.

For added nutrition, stir in some peas, mushrooms, or spinach.

Use any short pasta you have on hand—elbow, rigatoni, or rotini work great too.
