Ingredients
8 oz linguine
2 boneless skinless chicken breasts
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
3 garlic cloves, minced
2 tablespoons butter
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook the linguine until al dente, then drain and set aside.
2. Season chicken with salt and pepper. In a skillet over medium-high heat, heat olive oil and sear chicken on both sides until golden and fully cooked, about 6–8 minutes. Remove and slice into strips.
3. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and cook for 30 seconds until fragrant.
4. Stir in milk, then add Velveeta cubes and melt until smooth. Mix in shredded mozzarella and stir until creamy.
5. Add cooked linguine and sliced chicken to the sauce. Toss to coat well. If needed, loosen with extra milk.
6. Serve hot, garnished with chopped parsley if desired.
