Ingredients
12 egg roll wrappers
2 cups cooked shredded chicken
1 1/2 cups shredded cabbage or coleslaw mix
1/2 cup shredded carrots
2 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon ground ginger
2 green onions, chopped
Olive oil spray
Instructions
1. In a large bowl, mix shredded chicken, cabbage, carrots, garlic, soy sauce, sesame oil, ginger, and green onions until evenly combined.
2. Place a wrapper on a flat surface with a corner pointing toward you. Spoon 2-3 tablespoons of filling near the bottom.
3. Fold the bottom corner over filling, then fold in sides and roll tightly. Dab a little water on the final corner to seal.
4. Preheat air fryer to 375°F. Spray the basket with olive oil.
5. Spray each egg roll lightly with oil and place seam-side down in the basket.
6. Air fry in batches for 10-12 minutes, flipping halfway, until golden and crisp.
7. Serve hot with dipping sauces like sweet chili or spicy mayo.
Notes
Use rotisserie chicken for quick prep.
Don’t overcrowd the air fryer to ensure even crisping.
Seal egg rolls well to prevent splitting during cooking.
