Description

These Crispy and Fun Smashed Carrots are a flavorful roasted veggie side dish, perfect for weeknights or holidays. This smashed carrots recipe combines caramelized edges, tender centers, and savory seasonings. A unique and healthy alternative to mashed or roasted potatoes, and great for gluten-free, vegetarian, and clean-eating diets.


Ingredients

15 medium carrots

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped fresh parsley or thyme

2 tablespoons grated Parmesan (optional)


Instructions

1. Peel the carrots and place them in a large pot of salted water. Boil for 15 minutes or until fork-tender.

2. Drain and let the carrots cool slightly, then place them on a lined baking sheet.

3. Use the bottom of a glass or measuring cup to gently smash each carrot to about half an inch thick.

4. Brush with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.

5. Roast in a 425°F (220°C) oven for 25–30 minutes, flipping halfway through, until crisp and golden brown.

6. Remove from oven and sprinkle with fresh herbs and optional Parmesan while still hot.

7. Serve immediately and enjoy crispy edges with a soft, sweet center.

Notes

Carrots should be fork-tender before smashing for best texture.

Use parchment or foil on the baking sheet for easy cleanup.

Add chili flakes or a drizzle of spicy honey for a kick.
