Ingredients
1 head cauliflower florets
½ cup all-purpose flour
½ cup unsweetened plant milk or regular milk
1 cup panko breadcrumbs
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Olive oil spray
⅓ cup mayonnaise or plain Greek yogurt
1 tablespoon lemon juice
2 cloves garlic, minced or roasted
1 teaspoon Dijon mustard
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper. Cut the cauliflower into medium-sized florets.
2. In one bowl, whisk flour and milk to create a smooth batter. In another bowl, mix breadcrumbs with paprika, garlic powder, salt, and pepper.
3. Dip each floret into the batter, shake off excess, then coat in the breadcrumb mix. Place on the baking sheet.
4. Spray florets lightly with olive oil spray. Bake for 25–30 minutes, flipping halfway, until golden and crispy.
5. While baking, blend mayonnaise (or yogurt) with lemon juice, garlic, and Dijon mustard to create the garlic sauce. Chill until serving.
