These crispy black bean tacos are a fast, vegetarian-friendly meal idea perfect for weeknight dinners. Filled with seasoned black beans, these tacos are crunchy, satisfying, and customizable with your favorite toppings. Great for taco night or meal prep!
Ingredients
1 tablespoon oil
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
0.5 teaspoon salt
1 can (15 oz) black beans, drained and rinsed
8 corn tortillas
1 cup shredded cheese (optional)
Toppings of choice (lettuce, avocado, hot sauce, sour cream, etc.)
Instructions
1. Heat oil in a skillet over medium heat and sauté chopped onion until soft and translucent.
2. Add minced garlic and cook until fragrant, about 1 minute.
3. Stir in black beans, cumin, chili powder, and salt. Lightly mash some of the beans and cook until heated through and thickened.
4. Warm tortillas to make them pliable.
5. Spoon bean mixture onto one half of each tortilla, add cheese if using, and fold in half.
6. In a clean skillet, heat a bit of oil and fry folded tortillas until golden and crispy on both sides.
7. Serve hot with your favorite toppings.
Notes
Use fresh, pliable corn tortillas to prevent cracking.
For extra crispy tacos, press down lightly with a spatula while frying.
You can swap black beans for pinto or refried beans if you prefer.
