Description
This crispy cheesy beef chimichangas recipe is the ultimate Tex-Mex comfort food. Made with seasoned ground beef, melted cheese, refried beans, and golden-fried tortillas, it’s a family favorite dinner packed with flavor. Perfect for weeknight meals or entertaining.
Ingredients
1 lb ground beef
1 packet taco seasoning
1/4 cup water
1 cup refried beans
1 1/2 cups shredded Mexican blend cheese
6 large flour tortillas
2 cups vegetable oil for frying
1/2 cup sour cream (optional topping)
1/2 cup guacamole (optional topping)
1/2 cup salsa (optional topping)
Instructions
1. Cook the ground beef in a skillet over medium heat until browned and no longer pink. Drain excess fat.
2. Add taco seasoning and water to the beef, stir, and simmer for 2-3 minutes until thickened.
3. Remove from heat and stir in the refried beans until well combined. Let cool slightly.
4. Fold in the shredded cheese until the filling is mixed and cohesive.
5. Warm flour tortillas slightly to make them flexible. Spoon filling into each, fold in sides, and roll tightly.
6. Heat oil in a skillet over medium-high heat. Place chimichangas seam-side down and fry until golden and crispy on all sides.
7. Drain on paper towels and serve hot with sour cream, guacamole, or salsa.
Notes
Use lean ground beef to reduce excess grease.
Warming tortillas makes rolling much easier and prevents cracking.
For a lighter version, you can bake the chimichangas at 400°F for 20 minutes.
