Description

A delicious low-carb twist on a comfort food classic, Crispy Chicken Parmesan Stuffed Zucchini Boats feature golden breaded chicken, gooey cheese, and rich marinara tucked into tender zucchini shells. Perfect for a healthy dinner, this easy recipe is gluten-friendly and protein-packed.


Ingredients

2 large zucchini

1 cup cooked crispy chicken, chopped

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

1 tablespoon olive oil

Fresh basil leaves, for garnish


Instructions

1. Preheat oven to 400°F. Slice zucchini lengthwise and scoop out centers to form boats.

2. Brush zucchini with olive oil and season with garlic powder. Roast for 12 minutes.

3. Dice crispy chicken into chunks. Use store-bought or homemade breaded chicken.

4. Spoon a layer of marinara into each zucchini boat.

5. Add chopped crispy chicken on top of the sauce.

6. Spoon more marinara over the chicken and sprinkle with mozzarella and parmesan.

7. Bake for another 10 to 12 minutes until cheese is melted and bubbly.

8. Garnish with fresh basil and serve hot.

Notes

Use an air fryer for extra crispy homemade chicken.

Choose smaller zucchini for individual portions or large ones to share.

Reheat leftovers in the oven or air fryer to keep the texture crisp.
