Description

This Crispy Chicken Quesadillas recipe is a quick and satisfying dinner made with shredded chicken, gooey melted cheese, and golden-crisp tortillas. Perfect for weeknight meals, game-day snacks, or freezer-friendly meal prep. Easy, cheesy, and family-approved!


Ingredients

1 cup cooked chicken, shredded or diced

1 cup shredded cheese (Mexican blend or cheddar)

2 large flour tortillas

1 tablespoon butter or oil

1 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon chili powder

1/4 cup diced onion (optional)

1/4 cup diced bell pepper (optional)

Sour cream, salsa, or guacamole for serving


Instructions

1. In a skillet over medium heat, sauté onions and bell peppers (if using) until soft.

2. Add the cooked chicken to the skillet and season with garlic powder, cumin, paprika, and chili powder. Stir and warm through.

3. Lay one tortilla flat, sprinkle half the cheese on one side, add chicken mixture, and top with remaining cheese. Fold in half.

4. Heat butter or oil in a clean skillet and cook the folded tortilla for 2–3 minutes per side until golden and crispy.

5. Remove from skillet, let cool slightly, then slice into wedges.

6. Serve warm with sour cream, salsa, or guacamole.

Notes

This recipe is great for using up leftover chicken.

Make it vegetarian by swapping chicken with black beans or sautéed mushrooms.

For extra flavor, brush the outside of the tortillas with garlic butter before toasting.
