Ingredients
12 Yukon Gold potatoes
4 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh thyme leaves
1/2 cup grated Parmesan cheese
1 tablespoon olive oil (for greasing tin)
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with olive oil or cooking spray.
2. Peel and thinly slice the Yukon Gold potatoes using a mandoline for best results.
3. In a bowl, mix melted butter, garlic, salt, pepper, and thyme. Pour over the sliced potatoes and toss to coat evenly.
4. Add half of the grated Parmesan cheese and toss again to combine.
5. Stack the potato slices into each muffin tin cup, layering them tightly.
6. Sprinkle the remaining Parmesan cheese on top of each stack.
7. Bake for 45–50 minutes until the tops are golden and crisp, and the centers are tender.
8. Let the stacks rest for 5 minutes, then carefully remove with a spatula. Serve warm, optionally garnished with extra thyme.
