Ingredients
2 large sweet potatoes
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
3 tablespoons unsalted butter
2 cloves garlic, minced
1 teaspoon fresh rosemary, finely chopped
1 teaspoon fresh thyme leaves
1/4 cup grated parmesan cheese
Instructions
1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
2. Wash and peel the sweet potatoes, then cut into bite-sized cubes of equal size.
3. Place the cubes on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss until evenly coated.
4. Roast the sweet potatoes for 30 to 35 minutes, flipping halfway through, until edges are golden and crisp.
5. In a small saucepan over medium-low heat, melt the butter. Add minced garlic, rosemary, and thyme. Cook for 2 minutes until fragrant.
6. Remove from heat and stir in the grated parmesan cheese until melted and smooth.
