Ingredients
6 medium sweet potatoes
0.5 cup brown sugar
0.25 cup unsalted butter
1 teaspoon ground cinnamon
0.25 teaspoon salt
2 cups mini marshmallows
Instructions
1. Peel the sweet potatoes and slice them into 1/2-inch thick rounds or chunks.
2. Place the sweet potato slices into the crockpot.
3. Add pieces of butter over the potatoes, then sprinkle brown sugar, cinnamon, and salt evenly.
4. Cover and cook on low for 5 to 6 hours, stirring gently halfway through.
5. Once tender, top with mini marshmallows.
6. Cover and cook an additional 10 to 15 minutes until marshmallows are melted.
