Ingredients
1 cup dark chocolate (at least 60% cacao), finely chopped
½ cup eggnog
2 tablespoons unsalted butter
¼ teaspoon ground nutmeg
½ teaspoon vanilla extract
Pinch of salt
Cocoa powder, powdered sugar, or melted chocolate for coating
Instructions
1. Finely chop the dark chocolate and place it in a heatproof bowl.
2. In a small saucepan, heat eggnog and butter over medium heat until just simmering. Do not boil.
3. Pour the warm mixture over the chocolate and let it sit for 1 minute.
4. Stir gently until the chocolate is completely melted and smooth.
5. Mix in the nutmeg, vanilla extract, and a pinch of salt.
6. Cover the bowl and refrigerate for at least 2 hours until the ganache is firm.
7. Scoop and roll into small truffle-sized balls.
8. Roll each ball in cocoa powder, powdered sugar, or dip in melted chocolate.
9. Store in an airtight container in the refrigerator until ready to serve.
