Ingredients
16 pieces chewy brownies
2 cups heavy whipping cream
½ cup powdered sugar
1 teaspoon vanilla extract
8 oz cream cheese, softened
1 tablespoon instant espresso powder
1 box (3.9 oz) chocolate pudding mix
1½ cups cold milk
½ cup shaved chocolate or cocoa powder, for topping
Instructions
1. Slice the brownies and press into the bottom of a parchment-lined loaf pan to form the base.
2. In a bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
3. In another bowl, beat the softened cream cheese until smooth, then fold into the whipped cream.
4. Prepare the chocolate pudding mix with milk, using slightly less milk than the package suggests for a thicker consistency.
5. Stir in espresso powder to enhance the chocolate flavor.
6. Layer half the cream mixture over the brownie base and smooth it out.
7. Add a layer of chocolate pudding over the cream layer.
8. Repeat layers with remaining brownies, cream, and pudding.
9. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
10. Before serving, top with shaved chocolate or a dusting of cocoa powder.
Notes
This cake gets better as it chills overnight.
Use chewy brownies rather than cakey ones to maintain structure.
Add peanut butter or caramel drizzle for a fun twist.
