Description
Decadent Sweet Potato Crème Brûlée combines creamy custard with roasted sweet potatoes, caramelized sugar, and warm spices. This elegant yet easy dessert recipe is perfect for fall, Thanksgiving, or any special occasion.
Ingredients
1 cup roasted sweet potato puree
2 cups heavy cream
5 large egg yolks
1/4 cup brown sugar
1/4 cup granulated sugar (plus more for topping)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
Instructions
1. Preheat oven to 400°F. Wash and pierce sweet potatoes, then roast until tender, about 45–60 minutes. Cool, scoop out flesh, and puree until smooth.
2. Reduce oven to 325°F. In a saucepan, warm heavy cream until steaming, then remove from heat.
3. In a bowl, whisk egg yolks, brown sugar, and vanilla. Slowly whisk in warm cream to temper.
4. Add sweet potato puree, cinnamon, and nutmeg, whisking well. Strain through a fine mesh sieve.
5. Pour custard into ramekins. Place in baking dish, pour hot water halfway up sides. Bake 35–40 minutes, until edges set and centers jiggle slightly.
6. Cool to room temp, then refrigerate at least 2 hours or overnight.
7. Before serving, sprinkle tops with sugar and caramelize with a kitchen torch until golden and crisp.
Notes
Use a fine mesh sieve for the smoothest custard texture.
Chill the custards fully before torching to prevent melting.
Caramelize just before serving for the best crackle.
