Description

This Delectable Raspberry Tiramisu Delight is a no-bake dessert layered with creamy mascarpone, fresh raspberries, and syrup-soaked ladyfingers. A fruity twist on the classic tiramisu, this refreshing raspberry tiramisu recipe is perfect for summer parties, holidays, or weeknight treats.


Ingredients

1 cup mascarpone cheese

1 cup heavy cream

1/3 cup powdered sugar

1 teaspoon vanilla extract

24 ladyfingers (savoiardi or sponge-style)

2 cups fresh raspberries

1/2 cup raspberry jam or preserves

2 tablespoons lemon juice

1/3 cup water

2 tablespoons raspberry liqueur (optional)


Instructions

1. In a small saucepan, combine raspberry jam, water, lemon juice, and raspberry liqueur. Heat gently and stir until fully melted into a pourable syrup. Let it cool slightly.

2. In a mixing bowl, whip mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy. Be careful not to overbeat.

3. Quickly dip each ladyfinger into the raspberry syrup and arrange a layer in your serving dish.

4. Spread half of the mascarpone cream over the ladyfingers and scatter with fresh raspberries.

5. Repeat with another layer of dipped ladyfingers, followed by the rest of the cream.

6. Cover and refrigerate for at least 4 hours or overnight for best texture.

7. Before serving, garnish with more raspberries and a dusting of powdered sugar or white chocolate.

Notes

This recipe is best chilled overnight.

Use crisp ladyfingers if you prefer a firmer texture.

Raspberry liqueur deepens the flavor but is optional.
