Description

Hearty and comforting, this delicious beef stew and dumplings recipe is the perfect cozy meal. Made with tender beef chuck, root vegetables, and fluffy dumplings, it’s a one-pot wonder ideal for family dinners or cold nights. A satisfying stew recipe with soft dumplings and rich broth that everyone will love.


Ingredients

2 pounds beef chuck, cut into chunks

2 tablespoons olive oil

3 carrots, sliced

3 stalks celery, chopped

1 large onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste

4 cups beef broth

1 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons fresh thyme or 1 teaspoon dried

1 bay leaf

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

4 tablespoons cold butter, cubed

3/4 cup milk


Instructions

1. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef in batches, then remove and set aside.

2. In the same pot, add onions, carrots, and celery. Cook for 5–7 minutes until softened. Add garlic and tomato paste; cook for 1 minute more.

3. Return the beef to the pot. Add broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 1.5 to 2 hours until beef is tender.

4. To make dumplings, whisk flour, baking powder, and salt in a bowl. Cut in cold butter until crumbly. Stir in milk just until combined.

5. Drop spoonfuls of dumpling dough onto the stew. Cover and simmer for 15–20 minutes without lifting the lid. Serve hot.

Notes

Use beef chuck for the best tenderness after slow simmering.

Don’t peek while dumplings are cooking or they won’t fluff properly.

Add fresh chopped parsley before serving for color and a fresh touch.
