Description

Delicious Loaded Breakfast Hash is a hearty, one-pan breakfast packed with crispy potatoes, savory sausage, colorful bell peppers, onions, and eggs. This easy skillet recipe is perfect for busy mornings or weekend brunch and can be customized with cheese, bacon, or veggies. Great for meal prep or a family breakfast.


Ingredients

2 medium potatoes

8 oz breakfast sausage

1 bell pepper

1 small onion

4 eggs

1 cup shredded cheese

2 tablespoons olive oil or butter

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Microwave the diced potatoes for 4 minutes until slightly tender.

2. In a large skillet, cook the sausage over medium heat until browned. Remove and set aside.

3. Add olive oil or butter to the skillet, then add potatoes. Let them cook undisturbed to crisp up.

4. Add chopped onions and bell peppers. Sauté for 5–7 minutes until softened.

5. Return sausage to the skillet and stir everything together. Season with salt and pepper.

6. Make wells in the mixture and crack in eggs. Cover and cook until whites are set.

7. Sprinkle shredded cheese over top, let melt, and serve hot.

Notes

Use Yukon Gold or russet potatoes for the crispiest results.

Microwaving potatoes first helps them cook faster in the skillet.

Customize with bacon, kale, or avocado for extra flavor.
