Ingredients
16.5 ounces refrigerated sugar cookie dough
16 ounces cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/4 cup sour cream
1 tablespoon all-purpose flour
2 tablespoons sprinkles
Instructions
1. Preheat the oven to 350°F and line or lightly grease an 8×8-inch baking pan.
2. Press about two-thirds of the sugar cookie dough evenly into the bottom of the pan to form the base.
3. In a mixing bowl, beat the softened cream cheese until smooth.
4. Add the granulated sugar, egg, vanilla extract, sour cream, and all-purpose flour, then mix until fully combined and creamy.
5. Spread the cheesecake filling evenly over the sugar cookie base.
6. Flatten small pieces of the remaining sugar cookie dough and place them over the cheesecake layer in patches.
7. Sprinkle the top with sprinkles for a festive finish.
8. Bake for 30 to 35 minutes, until the edges are lightly golden and the center is mostly set.
9. Cool completely at room temperature, then refrigerate for at least 3 hours.
10. Slice into 9 bars and serve chilled.
Notes
Use fully softened cream cheese so the filling stays smooth and creamy without lumps.
Do not overbake the center. A slight jiggle is perfect because the cheesecake will finish setting as it cools.
For the cleanest slices, chill thoroughly and wipe the knife between each cut.
