Description
These Easy Baked Stuffed Peppers are a perfect dinner recipe made with ground beef, rice, and cheese all packed into sweet bell peppers. This stuffed peppers recipe is flavorful, easy to prep ahead, freezer-friendly, and perfect for family meals.
Ingredients
1 tablespoon olive oil
4 large bell peppers
1 pound ground beef
1 cup cooked rice
1 small onion, diced
2 cloves garlic, minced
1 1/2 cups tomato sauce
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
Instructions
1. Slice the tops off the bell peppers and remove seeds and membranes. Rub them with olive oil and place in a baking dish cut side up.
2. In a skillet, cook ground beef and diced onion over medium heat until browned.
3. Add garlic and cook for 1 minute until fragrant.
4. Stir in tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 2–3 minutes.
5. Spoon the filling into each pepper, pressing it in.
6. Top with shredded mozzarella cheese.
7. Cover the dish with foil and bake at 375°F (190°C) for 30 minutes.
8. Remove foil and bake for another 10–15 minutes until cheese is golden and bubbly.
9. Let cool slightly before serving.
Notes
Stuffed peppers can be frozen after baking.
Use ground turkey or chicken for a lighter version.
Add diced zucchini or spinach for extra vegetables.
