Description
These easy brownie mix cookies are chewy, fudgy, and quick to make. Perfect for chocolate lovers, this recipe turns a simple brownie mix into irresistible cookies with soft centers and crackly tops.
Ingredients
1 box brownie mix (about 18–20 oz) 1/4 cup vegetable oil 2 large eggs 2 tablespoons water optional 1/2 cup chocolate chips, walnuts, or caramel bits
Instructions
1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. In a large mixing bowl, combine the brownie mix, vegetable oil, eggs, and water. Stir until you have a thick dough. Fold in optional mix-ins like chocolate chips or nuts if desired. Using a tablespoon or cookie scoop, portion the dough onto the prepared baking sheets about 2 inches apart. Bake for 9–11 minutes, until the tops are set and crackly but the centers remain soft. Cool on the baking sheets for a few minutes before transferring to a wire rack. Enjoy!
Notes
Use a “fudge” or “chewy” brownie mix for best texture. Don’t overbake — cookies firm up as they cool. Store in an airtight container for up to 4 days or freeze for longer storage.
