Ingredients
2 cups carrot cake crumbs
6 tablespoons cream cheese frosting
1 1⁄2 cups white chocolate or candy melts

24 lollipop sticks
3 tablespoons chopped nuts, sprinkles, or shredded coconut
Instructions
1. Crumble the carrot cake into fine crumbs, removing any tough edges.
2. Mix the cake crumbs with cream cheese frosting until a dough forms.
3. Shape the mixture into 1-inch balls and roll until smooth.
4. Dip the end of each lollipop stick in melted chocolate and insert halfway into each ball.
5. Chill the cake balls with sticks for at least 1 hour in the fridge.
6. Melt the white chocolate with coconut oil until smooth and glossy.
7. Dip each chilled cake pop into the coating, tapping off the excess.
8. Immediately decorate with chopped nuts, sprinkles, or coconut.
9. Allow cake pops to set upright in foam or a stand until the coating hardens.
