Description

These Easy Chicken Pot Pie Bites with Biscuits are a quick, comforting, and delicious weeknight dinner made with biscuit dough, creamy chicken filling, and frozen vegetables. Perfect for family meals, parties, or meal prep. Great for leftover chicken recipes, easy dinners, and crowd-pleasing appetizers.


Ingredients

1.5 cups cooked chicken, shredded

1 cup frozen mixed vegetables, thawed

1 can cream of chicken soup (10.5 oz)

1 cup shredded cheddar cheese

1 can refrigerated biscuit dough (8 count)

0.5 teaspoon garlic powder

0.5 teaspoon salt

0.25 teaspoon black pepper

nonstick spray, for muffin tin


Instructions

1. Preheat oven to 375°F and spray a muffin tin with nonstick cooking spray.

2. In a bowl, mix shredded chicken, thawed vegetables, cream of chicken soup, cheese, garlic powder, salt, and pepper until well combined.

3. Flatten each biscuit into a disc and press into the muffin cups, pushing up the sides to form a base.

4. Fill each biscuit cup with the chicken mixture until just full.

5. Bake for 15–18 minutes until the biscuits are golden and cooked through.

6. Let cool in the tin for 3–5 minutes before removing and serving warm.

Notes

These bites can be frozen and reheated straight from the freezer.

Try substituting turkey or ham for the chicken for a twist.

Reheat in the air fryer for crispier edges.
