This Easy Chipotle Chicken (Copycat) recipe brings bold, smoky, and spicy flavors straight to your kitchen. Ingredients
2 pounds chicken thighs (boneless, skinless)
3 chipotle peppers in adobo sauce
2 tablespoons adobo sauce
3 cloves garlic
2 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Blend all marinade ingredients (chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, oregano, salt, and pepper) in a blender or food processor until smooth.
2. Place chicken thighs in a large bowl or resealable plastic bag. Pour marinade over the chicken and toss to coat. Let marinate for at least 30 minutes or up to 24 hours in the fridge.
3. Preheat grill or skillet over medium-high heat.
4. Grill or sear chicken for 5–6 minutes per side, or until fully cooked and charred on the outside.
5. Let chicken rest for 5 minutes, then slice against the grain for maximum tenderness.
6. Serve hot in bowls, tacos, or salads.
Notes
For extra heat, add a fourth chipotle pepper to the marinade.
Marinating overnight gives the deepest flavor.
Chicken breast can be used in place of thighs, just be careful not to overcook.
