Ingredients
1 lb chicken breast or thighs
9 oz cheese tortellini
1 cup Velveeta cheese, cubed
1 cup shredded mozzarella
1 cup heavy cream
2 tablespoons butter
3 cloves garlic, minced
1 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Cut the chicken into bite-sized pieces, season with salt and pepper, and sear in a large pot over medium heat with butter until golden and cooked through. Remove and set aside.
2. In the same pot, melt additional butter and sauté the minced garlic for about 30 seconds.
3. Pour in chicken broth and scrape up any browned bits at the bottom.
4. Add cheese tortellini directly into the broth and let it simmer until almost tender.
5. Reduce heat and stir in heavy cream, Velveeta cubes, and shredded mozzarella. Stir constantly until melted and smooth.
6. Return the cooked chicken to the pot and let it simmer for a few minutes. Adjust seasoning as needed.
7. Serve hot, garnished with fresh parsley if desired.
Notes
This dish is best served fresh, but leftovers reheat beautifully with a splash of broth or milk.
For added greens, stir in baby spinach or peas at the end.
Use boneless chicken thighs for extra juicy texture if preferred.
