Ingredients
3 to 4 pounds chuck roast
4 carrots, peeled and cut into chunks
4 potatoes, peeled and quartered
1 large onion, chopped
4 cloves garlic, minced
2 cups beef broth
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon cornstarch (optional, for thickening)
Instructions
1. Season the chuck roast with salt and pepper.
2. Heat olive oil in a skillet and sear the roast on all sides until browned.
3. Place chopped onions, carrots, and potatoes in the bottom of the crock pot.
4. Add the seared roast on top of the vegetables.
5. Add garlic, tomato paste, Worcestershire sauce, rosemary, thyme, and pour in beef broth.
6. Cover and cook on low for 8 hours or high for 4 to 5 hours until the roast is fork-tender.
7. For gravy, remove 1 cup of the cooking liquid, mix with cornstarch, and simmer on the stove until thickened.
8. Return the thickened gravy to the crock pot before serving.
Notes
The chuck roast is ideal for fall-apart tenderness, but you can use brisket or round roast if needed.
