Ingredients
1.5 pounds sirloin cap or top sirloin steak
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
3 tablespoons butter
4 garlic cloves, minced
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Pat the steak dry with paper towels and season both sides with salt and pepper.
2. Heat olive oil in a cast iron skillet over high heat until shimmering.
3. Sear steak undisturbed for 2–3 minutes per side, until a deep brown crust forms.
4. Lower heat to medium and add butter and garlic to the pan.
