Ingredients
1 lb ground beef
4 medium Yukon gold potatoes, diced
1 medium yellow onion, diced
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp paprika (optional)
2 tbsp olive oil or butter
Instructions
1. Heat a large skillet over medium heat. Add olive oil or butter and sauté the diced onion until softened.
2. Add garlic and cook for about 30 seconds until fragrant.
3. Add the ground beef. Break it apart and cook until browned, seasoning with salt, pepper, and optional paprika. Drain any excess fat and remove from skillet.
4. In the same skillet, add a bit more oil if needed and toss in the diced potatoes. Cook uncovered, stirring occasionally until golden and fork-tender.
5. Return the beef mixture to the skillet with the potatoes. Stir and cook a few more minutes to combine and develop flavor.
6. Taste and adjust seasoning as needed. Serve hot.

Don’t overcrowd the skillet to allow the potatoes to crisp properly.
