Description

Made with simple ingredients like chicken breast, parmesan, and breadcrumbs, this low-carb, family-friendly recipe bakes or pan-fries in under 30 minutes. Ingredients

1 lb chicken breast

1 cup grated parmesan cheese

1 cup breadcrumbs

1 tsp garlic powder

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

2 eggs

2 tbsp olive oil or cooking spray


Instructions

1. Trim and cut chicken breasts into evenly sized bite-sized chunks. Pat dry with a paper towel.

2. In one shallow bowl, whisk the eggs. In another bowl, mix parmesan, breadcrumbs, garlic powder, paprika, salt, and black pepper.

3. Dip chicken pieces into the egg wash, then coat in the parmesan-breadcrumb mix until fully covered.

4. To bake: Preheat oven to 400°F (200°C). Line a baking sheet with parchment and spray with oil. Place chicken in a single layer, spray tops lightly, and bake for 18–20 minutes, flipping halfway.

5. To pan-fry: Heat olive oil in a large skillet over medium heat. Cook chicken in batches for 3–4 minutes per side until crispy and fully cooked. Drain on paper towels.

6. Serve immediately with your favorite dipping sauces.

Let chicken rest on a wire rack for extra crispiness.
