Ingredients
1 lb chicken breasts, cut into bite-sized pieces
3 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon salt
1 teaspoon black pepper
1 3.5 oz jar sun-dried tomatoes, drained and chopped
1 cup heavy cream
1 cup grated Parmesan cheese
2 tablespoons butter
8 oz fettuccine pasta
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken pieces with Cajun seasoning, salt, and black pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken bites until golden and cooked through. Remove and set aside.
3. In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.
4. Stir in chopped sun-dried tomatoes and cook for another 1-2 minutes.
5. Pour in heavy cream and stir to combine. Add Parmesan cheese and stir until the sauce thickens and is smooth.
6. In a separate pot, boil fettuccine pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain.
7. Add the cooked pasta and chicken into the sauce. Toss everything together, adding pasta water if needed to loosen the sauce.
8. Sprinkle chopped parsley over the top and serve immediately while warm and creamy.
Notes
This pasta is best served fresh but makes fantastic leftovers.
You can use chicken thighs instead of breasts for a juicier flavor.
Don’t skip the sun-dried tomatoes—they bring sweet and tangy depth.
