Description

Make mornings easy with these effortless tasty make-ahead breakfast burritos. Packed with eggs, sausage, hash browns, and melty cheese, they freeze beautifully and are perfect for busy mornings. This freezer-friendly breakfast idea is customizable, hearty, and always satisfying.


Ingredients

10 flour tortillas

10 large eggs

1/3 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 pound breakfast sausage

2 cups shredded cheddar cheese

2 cups hash browns

1/2 cup diced bell peppers (optional)

1/4 cup diced onions (optional)


Instructions

1. In a skillet over medium heat, cook the breakfast sausage until browned. Set aside.

2. In the same skillet, sautée bell peppers and onions until softened (if using). Set aside.

3. In a bowl, whisk eggs with milk, salt, and pepper. Scramble in the skillet until just set. Remove from heat.

4. Cook hash browns until crispy and golden, using skillet or oven according to package instructions.

5. To assemble, lay out a tortilla and add eggs, sausage, hash browns, cheese, and veggies. Roll tightly.

6. Wrap each burrito in foil or parchment, then freeze in a zip-top bag or container.

7. To serve, unwrap and microwave for 2 to 3 minutes or heat in toaster oven until hot throughout.

8. Serve with salsa, hot sauce, or your favorite sides and enjoy.

Notes

Freeze burritos up to 3 months for best texture.

Let cooked fillings cool before assembling to avoid soggy burritos.
