Ingredients
1 1/2 cups strong brewed coffee, cooled
3 tablespoons dark rum (optional)
24 ladyfingers
1 1/2 cups heavy cream
1/2 cup eggnog
16 ounces mascarpone cheese
3/4 cup powdered sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsweetened cocoa powder (for dusting)
Instructions
1. Brew strong coffee or espresso and let it cool to room temperature. Stir in the dark rum if using.
2. In a mixing bowl, whip the heavy cream until soft peaks form. Set aside in the fridge.
3. In a separate bowl, combine mascarpone, powdered sugar, and eggnog. Whisk until smooth.
4. Gently fold the whipped cream into the mascarpone mixture until light and airy.
5. Quickly dip each ladyfinger into the coffee mixture and arrange them in a single layer in a baking dish.
6. Spread half the mascarpone mixture over the ladyfingers.
7. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
