Ingredients
6 large eggs
3/4 cup granulated sugar
2/3 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 1/4 cups canned dark sweet cherries (drained and chopped or whole)
4 ounces semi-sweet chocolate
2 tablespoons unsalted butter
Instructions
1. Preheat oven to 350°F (175°C) and line a jelly roll pan (10×15 inches) with parchment paper.
2. In a large bowl, beat the eggs and sugar with a mixer until pale, thick, and tripled in volume (about 5–6 minutes).
3. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture using a spatula.
4. Pour batter into the prepared pan and spread it evenly. Bake for 10–12 minutes or until the cake springs back lightly when touched.
5. While the cake is baking, lay a clean kitchen towel on a flat surface and dust it generously with powdered sugar.
6. Once the cake is done, immediately invert it onto the towel, peel off the parchment paper, and carefully roll the cake up with the towel inside. Allow to cool completely.
7. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form. Gently fold in the cherries.
8. Unroll the cooled cake, spread the whipped cream and cherry filling evenly over the surface.
9. Carefully re-roll the cake (without the towel) and place seam side down on a platter.
10. For the ganache, melt the chocolate and butter together in a microwave or over a double boiler until smooth. Cool slightly and pour over the rolled cake.
11. Chill for at least 1 hour before slicing and serving. Enjoy!
