Ingredients
2 firm ripe pears
2 tablespoons blue cheese crumbles
2 tablespoons honey
2 tablespoons chopped walnuts
1 tablespoon unsalted butter
1 teaspoon fresh thyme leaves (optional)
Instructions
1. Preheat the oven to 375°F.
2. Cut the pears in half lengthwise. Use a spoon or melon baller to remove the core and create a small cavity in the center.
3. Place pears cut side up in a baking dish.
4. Dot each pear half with a bit of butter in the hollowed-out center.
5. Fill the cavity with crumbled blue cheese.
6. Sprinkle chopped walnuts over each filled pear.
7. Bake for 25–30 minutes, until pears are tender and cheese is slightly golden.
8. Drizzle honey over the pears in the last 5 minutes of baking.
9. Remove from oven and let cool slightly.
10. Drizzle with more honey and sprinkle with thyme, if using. Serve warm.
Notes
This recipe works best with Bosc or Anjou pears for structure during baking.
Adjust the cheese based on your taste—goat cheese or gorgonzola also work beautifully.
