Ingredients

1 ¾ cups all-purpose flour

1 tablespoon baking powder

¼ teaspoon baking soda

½ teaspoon salt

2 tablespoons granulated sugar

6 tablespoons unsalted butter, cold and cubed

¾ cup buttermilk, cold

1 cup fresh or frozen blueberries


Instructions

1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

3. Add cold cubed butter and use a pastry cutter or your fingers to work it into the dry ingredients until it resembles coarse crumbs.

4. Gently fold in the blueberries until coated.

5. Pour in the buttermilk and stir just until the dough comes together. Do not overmix.

6. Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle.

7. Fold the dough over itself once or twice, then pat down again.

8. Use a biscuit cutter to cut out rounds. Press straight down without twisting.

9. Place biscuits on the prepared baking sheet, either touching for soft edges or spaced for crisp sides.

10. Bake for 15 to 18 minutes or until the tops are golden brown.

Use cold butter and buttermilk to ensure fluffy, tender biscuits.

Don’t thaw frozen blueberries; mix them in straight from the freezer to prevent discoloration.
