Description

These Freezer Breakfast Burritos are a meal-prep favorite packed with scrambled eggs, sausage, cheese, and veggies all wrapped in a soft tortilla. Perfect for busy mornings, they’re easy to make, freeze, and reheat. Try this hearty, protein-rich breakfast burrito recipe and enjoy a quick homemade breakfast every day.


Ingredients

8 large eggs

1 tablespoon olive oil

1 cup diced onion

1 cup diced bell pepper

1 pound breakfast sausage

1 cup shredded cheddar cheese

8 large flour tortillas

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. In a large skillet over medium heat, heat the olive oil and sauté the onions and bell peppers until soft, about 5-7 minutes. Remove and set aside.

2. In the same skillet, cook the breakfast sausage until browned. Drain excess grease and mix with the cooked veggies.

3. Crack eggs into a bowl, season with salt and pepper, and whisk well. Scramble in a nonstick skillet over low heat until just set.

4. Lay out the tortillas and divide the eggs evenly across them. Add sausage-veggie mix and top with shredded cheese.

5. Fold the sides of each tortilla in, then roll tightly into burritos.

6. Wrap each burrito in foil or parchment paper.

7. Freeze in a large zip-top bag or container for up to 3 months.

8. To reheat: unwrap and microwave for 1–2 minutes or bake at 375°F for 20–25 minutes until heated through.

Notes

Use whole wheat or low-carb tortillas for a healthier version.

You can swap sausage with bacon, ham, or plant-based protein.

Add salsa or jalapeños inside before wrapping for extra flavor.
