Ingredients

1.5 pounds ground beef

2 large yellow onions, thinly sliced

1 tablespoon olive oil

2 cloves garlic, minced

1/3 cup beef broth

1 tablespoon Worcestershire sauce

3/4 cup breadcrumbs

2 large eggs

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

6 slices Swiss cheese


Instructions

1. In a large skillet, heat olive oil over medium heat. Add sliced onions and cook for 25–30 minutes, stirring occasionally, until deeply caramelized. Stir in garlic and cook for another 1–2 minutes. Let cool slightly.

2. In a large bowl, mix ground beef, half of the caramelized onions, beef broth, Worcestershire sauce, breadcrumbs, eggs, thyme, salt, and pepper. Mix gently until combined.

3. Shape the meat mixture into a loaf on a parchment-lined baking sheet or use a loaf pan.

4. Bake at 375°F (190°C) for 40–45 minutes or until mostly cooked through.

5. Top with remaining caramelized onions and Swiss cheese slices. Bake an additional 10–15 minutes until cheese is melted and bubbly.

6. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Letting the onions caramelize slowly brings out the best flavor.

Don’t overmix the meat mixture to keep the meatloaf tender.

Use parchment for easier cleanup and loaf removal.
