A one-skillet comfort food dinner perfect for family meals or guests. Ideal for fans of French onion soup, this hearty dish is full of bold flavor and cozy vibes.
Ingredients
1 lb pork chops
2 large yellow onions, sliced
2 cups beef broth
2 tbsp butter
1 tbsp olive oil
1 tsp dried thyme
2 cloves garlic, minced
4 slices Gruyère cheese
1 tsp salt
1 tsp black pepper
Instructions
1. Slice the onions thinly and cook in butter and olive oil over medium-low heat until golden and caramelized, about 25–30 minutes.
2. Season pork chops with salt and pepper. Push onions to the side of the skillet and sear chops on both sides until browned, about 3–4 minutes per side. Remove from pan.
3. Add garlic and thyme to the onions and cook until fragrant. Pour in beef broth and scrape the skillet to deglaze. Let it simmer briefly.
4. Return pork chops to the skillet, nestling them into the onions and broth. Cover and simmer for 15–20 minutes until fully cooked.
5. Top each pork chop with a slice of Gruyère cheese. Cover and let melt or broil briefly until bubbly.
6. Serve hot with onion gravy spooned over each chop.
Notes
This recipe works beautifully with bone-in pork chops for extra flavor.
If Gruyère isn’t available, Swiss or provolone cheese makes a great substitute.
Make sure the onions are fully caramelized before moving on—they’re the heart of the flavor.
