Ingredients
1 loaf bread (preferably brioche or challah), cubed
4 large eggs
1 cup whole milk
1/2 cup heavy cream
1/3 cup brown sugar
1 1/2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons butter (for greasing)
Maple syrup (for serving)
Instructions
1. Cut your bread into small cubes and set it aside in a large mixing bowl. Toast it in the oven for 5 to 7 minutes at 300°F if too fresh.
2. In another bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, and salt until smooth.
3. Pour the custard over the bread cubes and gently mix. Let sit for 10 minutes to soak.
4. Grease a 12-cup muffin tin with butter or spray. Spoon the soaked bread evenly into each cup.
5. Bake at 350°F for 25 to 30 minutes, or until golden brown. Let cool in the pan for 5 minutes.
6. Serve warm with maple syrup, powdered sugar, or fruit.
Notes
Let the bread soak thoroughly to avoid dry spots.
Use day-old brioche for best texture and flavor.
Grease muffin tins well to prevent sticking.
