Ingredients
4 fresh peaches
1 cup fresh blueberries
5 oz mixed greens
4 oz goat cheese
½ cup toasted pecans
2 tbsp fresh mint leaves
2 tbsp olive oil (plus more for grilling)
1 tbsp honey
2 tbsp lemon juice
Salt and pepper to taste
Instructions
1. Cut the peaches in half and remove the pits. Brush the cut sides lightly with olive oil and grill cut-side down for 2–3 minutes until softened and grill marks appear. Cool and slice into wedges.
2. In a small bowl, whisk together olive oil, honey, lemon juice, salt, and pepper to make the dressing.
3. Arrange mixed greens on a large platter or salad bowl. Top with grilled peach wedges and blueberries.
4. Crumble goat cheese over the salad and sprinkle with toasted pecans.
5. Drizzle the dressing evenly over the salad and garnish with torn mint leaves. Serve immediately.
Notes
Use fresh, firm peaches for best grilling results.
You can substitute feta for goat cheese if preferred.
Dress the salad just before serving to keep greens crisp.
