Ingredients
2 cups peeled and diced apples
2 tablespoons granulated sugar
2 tablespoons brown sugar
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon butter
1 teaspoon lemon juice
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1/4 cup shortening or butter
3/4 cup milk or buttermilk
Oil for frying (about 2 to 3 cups, as needed)
Instructions
1. Peel and dice the apples, then cook them in a saucepan with granulated sugar, brown sugar, cinnamon, nutmeg, butter, and lemon juice until soft and syrupy. Let cool completely.
2. In a bowl, whisk flour, baking powder, and salt. Cut in the shortening or butter until crumbly. Gradually stir in milk or buttermilk to form a dough. Let rest for 15 minutes.
3. Roll out dough on a floured surface and cut into circles. Add apple filling to one side, fold over, and crimp edges with a fork.
4. Heat oil in a skillet over medium heat. Fry pies until golden brown on each side. Drain on paper towels.
5. Serve warm with a dusting of powdered sugar or drizzle of glaze. Freeze extras or store at room temp for 2 days.
